Roasters and origins
Space for coffee roasters to bring their own approaches, origins and points of view to the bar.
The name begins with where we come from. But roots are more than history: they are the people, places, rituals, ingredients and ideas that continue to shape us.
A story taking shapeSTOOR is centred on storytelling: preserving and celebrating culture while staying open to the stories that arrive through other people.
STOOR’s story is not meant to exist alone. Coffee and food carry the places they come from. Makers, artists and roasters bring their own ways of seeing. Guests bring memories, habits and new conversations.
The intention is not simply to build a transactional café, but a place where these different threads can be noticed, shared and carried forward.

STOOR is taking shape on the ground floor of Gaffa — a wider environment for art, making and exchange.

That setting matters. A café within the precinct can become a point where hospitality and creative practice overlap — where an exhibition, a conversation or a cup of coffee can belong to the same visit.
Minimal, but never neutral: the interior gives different moments of the day their own pace and atmosphere.

Mondrian-retro colour meets the economy and ritual of a traditional Japanese filter-coffee bar.
A Scandinavian-retro influence brings warmth, comfort and a slower place to sit.
STOOR is being imagined as a platform for exchange, not a finished calendar of events.

An open invitation for art and hospitality to meet, shaped by the creative environment around Gaffa.
Future collaborations may grow from nearby makers and practices, including ideas being explored with Miyavi Florist.

Coffee and ingredients do not begin at the counter. They come from particular places, pass through particular hands and carry the decisions of growers, producers and makers.
